Winter Squash and Rice “Laksa” Soup
This “Laksa” soup is a favorite way to eat winter squash — it has a bit of a bite, but is mellowed by the coconut milk.

Colache
Colache is a slightly spicy dish, but the zucchini mellows it. The corn adds a little crunch and a sweet taste, giving the colache several different layers of flavor. A delicious side dish for any Mexican meal! (It also pairs well with Mexican rice.)

Nana’s Zucchini Bread
This recipe is a favorite break-time snack with our garden shed crew! It’s moist and light because of the zucchini. Everyone–from the first-generation farmers to the third-generation grandkids–enjoys this bread. Make one loaf with chocolate chips and one without so you can have a slice for breakfast or dessert!
