Colache
Colache is a slightly spicy dish, but the zucchini mellows it. The corn adds a little crunch and a sweet taste, giving the colache several different layers of flavor. A delicious side dish for any Mexican meal! (It also pairs well with Mexican rice.)

		Ingredients
- 4 Tbsp. butter
 - 1 large onion chopped
 - 3 cloves garlic minced
 - 1 bell pepper seeded and chopped
 - 2 Anaheim peppers seeded and chopped
 - 3 zucchini or summer squash cut into rounds
 - 4 ears fresh corn cut from cob
 - 4 tomatoes peeled if desired, chopped
 - salt and pepper to taste
 - fresh cilantro
 
Instructions
- Sauté onions, peppers, and garlic in butter for a few minutes.
 - Add zucchini, sautéing briefly.
 - Add tomatoes and corn. Season with salt and pepper.
 - Cover and cook for 20 minutes.
 - Uncover, cook until juice is reduced—about 15 minutes more—stirring often.
 - Remove from heat, garnish with cilantro, and serve.
