Cream of Asparagus Soup
- 2 pounds of asparagus
- 2 small yellow onions
- ¼ cup butter
- chicken stock
- salt and pepper to taste
- Gently boil asparagus, onions, and butter in several inches of stock until asparagus is no longer firm.
- Puree and reheat.
- Add salt and pepper to taste.
- Keep warm until serving.
- After ladling into bowls, add cream, milk, or almond milk depending on the dietary needs of each.
