Cream of Asparagus Soup

With varying dietary needs in our family, we’ve begun experimenting with ways to enjoy our favorite recipes without compromising anyone’s enjoyment. This soup is super simple to make, and easy to adapt for each person’s diet right as you serve the dish. Enjoy!

Cream of Asparagus Soup

Course: Soup
Servings: 4 people

Ingredients

  • 2 pounds of asparagus
  • 2 small yellow onions
  • ¼ cup butter
  • chicken stock
  • salt and pepper to taste

Instructions

  • Gently boil asparagus, onions, and butter in several inches of stock until asparagus is no longer firm.
  • Puree and reheat.
  • Add salt and pepper to taste.
  • Keep warm until serving.
  • After ladling into bowls, add cream, milk, or almond milk depending on the dietary needs of each.
