Whether you call it Salsa Fresca or Pico de Gallo, fresh cabbage salsa is a must-have Mexican side dish. Add green tomatoes for a distinctly delicious flavor!

Ingredients
cabbagegreen or Napa
onionssweet and/or red
sweet peppers
hot peppersoptional, to taste
green tomatoes
red tomatoesoptional
cilantrofresh
garlic or garlic scapesfresh
saltto taste
pepperfresh ground, to taste
lemon or limezest or juice
Instructions
Finely chop all vegetables. (Don't grate the cabbage: it will become mush.)
Mince garlic and cilantro.
Mix garlic and cilantro thoroughly with chopped vegetables.
Sprinkle with salt and pepper to taste.
Add lemon or lime juice (or zest) to taste.
Serve chilled.
Notes
This salsa fresca is often better if it sits a few hours, so that the flavors have a chance to blend a bit!
